Meet Kenny Styles, Head Chef at Carriages,
a well-respected chef, classically trained at
Le Cordon Bleu, the international network
of hospitality and culinary schools teaching MARK MCHUGO
French haute cuisine.

Kenny opened his fi rst restaurant 10 years BLATCHFORD
ago having honed his craft under some of Chapters
the best chefs in the country. When it comes
to cooking role models, Kenny is inspired Hay on Wye
by the Roux brothers, Marco Pierre White, In 2019 chef Mark and his partner
Shaun Hill, Anthony Demetre, and Phil Charmaine, launched their own venture,
Howard. When asked about his earliest food Chapters, in the meeting rooms of St Johns
memory, Kenny reminisces about his Mum’s Chapel in Hay-on-Wye. A long-held dream
of this well-matched couple, Chapters has

its most crucial time of opening, rising high
in the ranks of destination dining through its
culinary excellence.
Mark’s natural progression up the ladder within
award-winning kitchens stood him in good
stead for his own establishment. While the
menu and presentation refl ect fi ne dining, they
prefer a modern British description, wanting it
to be accessible to all.
Charmaine’s established record in hospitality
and food retail have honed her front-of-house
skills to create a wonderful kitchen-to-customer
experience.
Strong advocates of the Slow Food movement,
the couple’s efforts in sustainability, low food
miles, reducing waste and developing their
own nearby no-dig kitchen garden have made EXPERIENCE CARRIA GES
them one of a limited number of venues in the
UK to receive the new Michelin Green Star in
2022 and retain it in 2023.
